Pan Loaf Bread
Ingredients
- 3/4 cup (174g) water
- 1/2 cup (125g) whole milk
- 1 packet (9g) yeast
- 3 cups (440g) bread flour
- 1.5 teaspoons (8g) fine sea salt
- 1 tablespoon (21g) granulated sugar
- 3 tablespoons (42g) unsalted butter softened
Directions
- 1. Take out butter early so it can come to room temperature.
- 2. Mix water and whole milk and heat to ~100F.
- 3. Stir in yeast and set aside.
- 4. In a mixing bowl, measure out flour.
- 5. Add to the bowl the sugar and salt.
- 6. Attach a dough hook to a stand mixer and start it up with the flour mixture.
- 7. Pour in the water/milk/yeast mixture.
- 8. Once the dough comes together, add butter 1 tbsp at a time (do *NOT* add another until the dough incorporates the butter and comes back together).
- 9. After all the butter is added, wait 30s more.
- 10. Turn out to the counter and shape into a ball.
- 11. Place the dough in an oiled bowl and cover with a damp towel.
- 12. Wait 1-1.5 hours or until doubled in size.
- 13. Place some parchment paper in a bread loaf pan and grease it with some oil.
- 14. Turn dough out on a floured work surface.
- 15. Roll the dough out to about 1 inch thickness.
- 16. Roll the dough by hand into a log the width of the pan and place it in the pan.
- 17. Cover with a damp towel and wait 45-60 minutes or until it puffs over the top of the pan.
- 18. Place into an oven set to 350F and let bake for 35-40 minutes.
- 19. Once the top is browned, pull it out and let cool completely on a wire rack.
